Perfect to take on a hike or afternoon snack, these protein zucchini muffins provide a healthy snack to refuel your body. Using zucchini, there is 4 serving of vegetables included and protein to fuel your body with the nutrients it needs. Being able to use Wilderness Athlete protein in various ways helps provide protein in new ways.
Protein Zucchini Muffins Ingredients:
(yields approx. 14 muffins)
- ¾ cup gluten free rolled oats
- 1 ½ cups gluten free flour
- ½ cup Wilderness Athlete Chocolate Meal Replacement powder
- 2 tablespoons cocoa powder
- ½ baking powder
- 1 tsp baking soda
- ½ tsp salt
- 1 teaspoon of cinnamon or nutmeg
- 2 eggs
- 2 egg whites
- ¾ cup applesauce
- 1/3 cup coconut palm sugar
- 2 cups grated zucchini
Instructions:
- Preheat oven to 375 degrees
- Combine dry ingredients into large mixing bowl and mix together
- Combine wet ingredients and sugar into small mixing bowl and stir together
- Add the dry ingredients to the wet ingredients and mix until blended
- Add chocolate chips if desired
- Line muffin tin and bake for 18 minutes
