CHICKEN ZOODLE SOUP

Cold weather has been a part of our daily routine for a few months now, making every outdoor task that much more demanding. We can’t speak for everyone, but for us here at Wilderness Athlete, nothing caps off a cold day of hard work better than a good bowl of Chicken Noodle Soup. Note, a good bowl of soup never comes from a can. It is chalk full of hearty, healthy ingredients that not only warm the soul but also fuel your body.

This being said, we are always looking for new and exciting ways to make the soups we love even better. If you are looking for a low-carb alternative to Chicken Noodle Soup, then this Chicken Zoodle Soup is the best way to go. Not only is it lower in carbohydrates, but it tastes amazing. The zucchini noodles are a great alternative and provide your palate with a very similar texture. This is not one of those recipes you use just because you are trying to be healthy. Trust us, after you have this soup, you may never go back to noodles again.


PREP TIME: 15 MIN          COOK TIME: 20 MIN          MAKES 8 SERVINGS

INGREDIENTS

1 lb boneless, skinless chicken breast, cubed

4 zucchinis, spiralized

5 cups chicken broth

3 carrots, sliced thin

3 celery stalks, sliced

½ onion, diced

2 garlic cloves

1 tsp salt

1 tsp black pepper

1 tsp thyme

1 Tbsp olive oil

INSTRUCTIONS

Heat the oil in a large pot over medium-high heat. Add the chicken and cook for a minute or two. Add the onion, celery, carrots and garlic. Stir and cook until the chicken is cooked through. Add the chicken broth and seasonings, stir and let it simmer for 15 minutes. Add the zucchini and cook for 2-3 more minutes.
